So I wanted to make a pot roast for dinner tonight, to assuage my anxiety, and the recipe calls for half a cup of red wine.
We only have white wine. And rum.
And I could run out and buy some red wine, but sadly I live in a benighted state which does not allow anyone to buy wine on Sunday, because Jesus. Even though Jesus was the guy famous for turning water into wine.
I could use red wine vinegar, but Dr. Skull says that won't work.

White wine should be fine. It'll be a little different. Red vinegar would actually produce something edible-- it will be like a sauerbraten, but it will not be the same.
We decided on cheese sandwiches tonight and pot roast tomorrow.

To make a full bottle of mock wine for cooking, I combine three cups of stock (don't use water) with a half cup of white or red wine vinegar. To take the edge off the harshness of the vinegar: for every ounce of vinegar, I add a fat pinch of sugar (in this case, four).
Now if only I can remember that for next time
